However, this eating scheme is not the most correct if we want to eat a healthy diet and consume foods that make us feel full of physical and mental energy throughout the day. Carbohydrates give us energy, yes, but it is energy that comes as fast as it goes. This occurs in the case of simple carbohydrates that cause blood glucose peaks as they are assimilated quickly by our body. However, those more complex carbohydrates, such as those of fruit or vegetables, release all their benefits more slowly so that their effects are better and longer-term.

Rice is the star of Asian cuisine. It allows you to make a lot of different dishes, and its characteristics make any sauce soak into its grains to perfection. However, it is not recommended when we think of low carb recipes, plus it has perfect substitutes. Quinoa or rice made from cauliflower make it easier for us not to have to give up some dishes. This is the case with this Asian-style cauliflower rice: gluten-free and refined carbohydrates.

  •   Half cauliflower
  •   A carrot
  •   1 red pepper
  •   Half red onion
  •   1 zucchini
  •   Sesame seeds

Hummus is a typical Middle Eastern pasta that is increasingly popular in Spain. In the traditional recipe the base is formed by chickpeas mixed with tahini pasta, among other ingredients. To avoid the amount of carbohydrates in legumes, tahini pasta can be used to create a vegetable hummus based on beets. It is great as a side to some raw vegetables ‘crudités’ or some gluten-free seed crackers.

  •   400 g of cooked beet
  •   100 g of quinoa
  •   Half a tablespoon of tahini (made from sesame seeds)
  •   1 tablespoon of lemon juice
  •   4 tablespoons of extra virgin olive oil

Quinoa can be included in recipes in which we normally use rice , you just have to season it a little more. We finish the list of low carb recipes with something that we all love: pizza. It is one of the star dishes of a dinner with friends, or a family meal to involve the little ones in the house in the kitchen. It allows to create many variants with vegetables, meat or fish, and admits different sauces as toppings. The problem? The pizza dough must contain flour, and refined flours are usually used. It is necessary to replace these flours with others made from nuts and quinoa.
